My only real lasting extra curricular activity was that I was on a dance team for all 4 years I also did 3 independent study courses which turned into research projects and some were presented at conferences. Some student government stuff in my last semester. I also worked various ridiculous jobs like babysitting, dvd store clerk, cashier at a local gym, tutoring...etc.
As far as other soft factors go I did have two extremely glowing recommendation letters from faculty members who knew me WELL. I was very lucky to have them. I also think my personal statement was above average because I worked on it for about two months, had multiple readers give me input, and wrote over 20 drafts in all.
I did not submit a diversity statement.
I only applied to Harvard because it was the only school I wanted to go to. I knew that if I didn't get in I would try again next year and open up to a broader range of schools.
